Bark Barbecue, a Dominican-style barbecue operation, has opened a permanent restaurant this summer at 25 Thames St, on the Bushwick and East Williamsburg line Now it has moved into a space of roughly 8,000 square feet, a big step up from a single counter. The brisket is the centerpiece, cooked until tender, with the smoky richness of American barbecue meeting Dominican seasoning instincts Maduros, the sweet, caramelized ripe plantains, make a natural partner for the meat The fried pork belly is the other order worth planning around, crisp on the outside and juicy within. The restaurant is open daily from 11am and closes between 8 and 9pm The size of the room makes it a good fit for groups who want to share plates, and its location in the industrial stretch of Bushwick makes it an easy meal to pair with a day of exploring nearby galleries and studios.
