Pizza Studio Tamaki, the Tokyo pizzeria known as PST, has opened its first American location at 123 St. Marks Place in the East Village. The restaurant is the work of pizzaiolo Tsubasa Tamaki, and it bills itself as the brand's first US outpost.

The pitch is what it calls Tokyo-Neapolitan pizza. The dough is made with Tamaki's own flour blend, imported from Japan. The restaurant describes the result as crisp on the outside and chewy within, a texture it says came out of long experimentation, and it stresses carefully chosen ingredients. Beyond the pies, the menu includes PST's signature starters and a considered beverage program.

Reservations are taken through SevenRooms, DoorDash Reservations and Dorsia, on a rolling 14-day window. New dates are released every day at 10:00 AM ET. If a date shows no availability, it is fully booked, but diners can join a waitlist through the "Alert Me" button on SevenRooms or the "Notify" button on DoorDash. The restaurant also seats walk-ins on a limited, first-come, first-served basis as space allows.

For Japanese-speaking New Yorkers, it is a chance to find a Tokyo take on pizza a short walk from the St. Marks strip, with a Japanese-language welcome on the restaurant's own site.
