Pizza Studio Tamaki, the Tokyo pizzeria built around pizzaiolo Tsubasa Tamaki, has opened at 123 St. Marks Place in the East Village. It is the first US location for the brand, known as PST.
The pitch is what Tamaki calls Tokyo-Neapolitan: a proprietary flour blend milled in Japan, a 30-hour ferment, and Okinawan salt scattered on the oven floor. The goal is a crust that is crisp on the outside and chewy within. Two pies anchor the menu, the house Tamaki pie and the 5 Formaggi, a five-cheese pizza. The kitchen also sends out PST's signature starters.
The drinks program comes from Moody Tongue brewery, which gives the pizza a local pairing on the beer side.
The restaurant serves Tuesday through Sunday evenings. Reservations are taken through SevenRooms, DoorDash and Dorsia on a rolling 14-day window, with new dates released daily at 10:00 AM ET. Fully booked dates offer a waitlist alert, and a limited number of walk-in seats are held on a first-come basis. For Japanese-speaking New Yorkers, the menu and site are bilingual, and the pizza will feel familiar to anyone who misses Tokyo's take on the Neapolitan pie.
