Bar Susanne Opens in Williamsburg, NYC: A Raw Bar on the Domino Park Waterfront

Bar Susanne opened on May 15, 2026, at 6 River Street in Williamsburg, near the southern end of Domino Park. It calls itself a raw bar, cocktail bar and restaurant highlighting local seafood on the Brooklyn waterfront, and adds that it is "also a pretty good time." The room seats 75, with amber lighting, a wall of windows and recycled oak floors, and paintings by co-owner Marisa Maddy Ripo and her mother hang on the walls.
The owners are designer Matthew Maddy, a James Beard Award nominee known for Lilia and Oxomoco, and his partner Marisa. In the kitchen is chef Jackie Carnesi, formerly of Kellogg's Diner and Nura. After two years at Kellogg's she told Brooklyn Magazine she wanted to return to a more traditional kitchen, and that the restaurant feels very New York because it showcases local seafood.
That seafood comes from Long Island's North Fork and other waterways around the city. A display of shellfish greets guests at the door, and oysters are served on the half shell. The menu's signature is razor clam ceviche in a passionfruit aguachile. Other dishes include shrimp cocktail with an aioli made from roasted shrimp shells, pickled mussels with coconut jugo verde, crab salad with pickled chilies, a caviar service, grilled squid, fluke Milanese and roast chicken. There is a burger for those who prefer land, and creative desserts to finish.
Milos Zica runs the bar program, built around martinis, agave spirits, house signatures and low-ABV options, alongside New York State wines.
Bar Susanne is open Tuesday to Friday from 5pm to 11pm and Saturday and Sunday from 11am to 11pm. Reservations are through OpenTable, and private events are handled via the website's Events page. Next door at 8 River Street is sibling Cafe Susanne, serving coffee and cocktails Sunday to Thursday from 8am to 8pm and Friday and Saturday from 8am to 9pm.
