Cholapink, a fast-casual Peruvian restaurant, opens on October 28 at 32 Spring Street in Nolita. It comes from the Puerto Rican singer Daddy Yankee and the Peruvian chef Jaime Pesaque.

Anticuchos, grilled skewers, are the center of the menu. The restaurant's Instagram describes them as the heart of Lima's street-food culture, and says Cholapink gives that Lima classic a new home in New York. In the restaurant's photo, the skewers are glazed in a red sauce and topped with mint, tender greens and thin slices of vegetable.

Pesaque is a World's 50 Best chef and a global restaurateur. The restaurant says he brings the precision, technique and knowledge of Peruvian ingredients he developed in the fine-dining kitchen of Mayta to this more casual format. In his words, the heart of Peruvian cuisine is found in the markets and city streets, in what people eat every day. Cholapink, he says, celebrates the bold flavors and ingredients of the food he grew up with.
Peruvian press reports, from Peru Informa and OIGO, say the project grew out of a partnership between Daddy Yankee, Pesaque and a group of investors. According to those reports, Daddy Yankee wanted the concept to be Peruvian rather than Mexican. The reports initially put the opening in September. The restaurant is now set to open on October 28.
Cholapink is open daily from 11:30 am to 11 pm. For Japanese readers who know Peruvian cooking, from ceviche to Nikkei-style dishes, it adds a Lima street-food option to Nolita.
