The Infinite Table, a new immersive dining company, is making its debut with Oaxaca: Tierra y Tiempo at ARTXNYC, 409 W. 14th St., in the Meatpacking District of Chelsea. The residency runs October 2 through October 25. Its subject is Oaxaca, Mexico, and it follows the ideas of land (tierra) and time (tiempo) through the region's people and foodways.

The setup is simple. Inside a specially built theater within ARTXNYC, guests sit at long communal tables while the story of each dish is projected in 360 degrees on the surrounding walls. When a dish appears on screen, it arrives at the table. Time Out's Rachel Askinasi compared it to watching a food documentary and then getting to taste it yourself, and singled out the crunchy grasshoppers.

Scent is a central part of the design. Founder Peter Kim worked with sensory adviser Paul Austin and perfumers Patricia Bilodeau and Elena Valdivieso-Ruiz of the fragrance and flavor house Robertet to create three original scent expressions: sun/maíz, fire/agave and forest/cacao. According to WWD, each one enters at a set point in the story, with its timing, intensity and duration matched to what guests see, hear and taste. Austin told the outlet that those details are what let scent become part of the narrative.

WWD reports tickets start at $95 for a three-course lunch and $139 for a five-course dinner. A vegan menu is available. Seatings run Friday through Sunday, and the run ends on Sunday, October 25. Reservations are made through the BOOK button on the official website.

After New York, The Infinite Table plans to bring Oaxaca: Tierra y Tiempo, along with future chapters, to Los Angeles, Chicago and other U.S. cities. For anyone wanting a meal that merges food, film, sound and fragrance into a single evening, this is the format on offer.
