Pizza Studio Tamaki, the Tokyo pizzeria known as PST, now has an American address: 123 St. Marks Place in the East Village. The restaurant's own site calls it the brand's first location in the US, and greets visitors in both English and Japanese.
The man behind it is pizzaiolo Tsubasa Tamaki, whose approach the restaurant describes as Tokyo-Neapolitan. The dough is built on Tamaki's proprietary flour blend, which is imported from Japan, so the New York pies start from the same base as the ones made in Tokyo. The Japanese-language blurb on the site sums up the goal as a crust that is crisp outside and chewy inside, reached after a long process of trial and error, paired with carefully chosen ingredients that the restaurant describes as safe and trustworthy.
Pizza is not the whole menu. The restaurant also serves PST's signature starters and what it calls a thoughtful beverage program, and the site links to a full menu page.
Booking works on a rolling 14-day window. Reservations can be made through SevenRooms, DoorDash Reservations and Dorsia, and new dates are released every day at 10:00 AM ET. When a date shows no availability, it is fully booked. Diners can still join a waitlist: the "Alert Me" button on the SevenRooms page and the "Notify" button on the DoorDash page both collect contact details in case a cancellation comes up.
Walk-in guests are also welcome on a limited basis. They are seated first come, first served, as space becomes available.
The site also sells gift cards through Toast, offers an email signup, and points to the restaurant's Instagram account, @pst.nyc.
For Japanese readers in New York, this is a Tokyo pizza name arriving a short distance from the St. Marks strip, with Japanese-language information on the restaurant's own site.
