Located in a country with Russia to the north, Turkey to the south, and the Black Sea to the west, Georgia has brought in different food cultures from the north, south, east, and west, and has also merged with the food culture of the mountainous regions to form its own food culture. Since the Middle Ages, Georgia has been under the rule of different countries in the east and the west, and the food culture is characterized by differences between the east and west. This is the place in Williamsburg where you can enjoy such authentic Georgian cuisine. The cheese boat that gives the restaurant its name is a Georgian specialty called khachapuri. It is now considered a representative dish of Georgia, but it originated in West Georgia. The way of making Hachapuri varies from region to region in West Georgia, and the shape also varies. The iconic boat-shaped khachapuri is called Adjarian Khachapuri and is made near the border with Turkey. The flat, pancake-shaped Imeruli khachapuri is from the Midwest, and in fact, this form is more orthodox in Georgia. The basic recipe for all khachapuri is the same: flour is mixed with water and yogurt, the bread is fermented, and cheese is added and baked. The boat-shaped Ajarian khachapuri is baked with cheese and butter on top of the dough, and an egg is added as a finishing touch. When eating, the cheese and eggs are stirred together, and the bread is dipped into the mixture as it is eaten, the Georgian way. The Imeruli khachapuri can be eaten with one hand like a pizza because the cheese is inside the bread. The generous amount of butter and cheese is a perfect match. The portion is large enough to share among four people.

The soup we ordered with the khachapuri was Ukrainian borscht. Actually, borscht is not a Russian dish, but a local Ukrainian dish. The pinkish soup with beets and herbs is excellent when eaten with bread dipped in it. In addition, you can enjoy Khinkali, which is called Georgia's small basket soup, Georgian wine, and other Georgian dishes.
